GRAPES: From vineyards of at least 30 years of age, with good exposure to south-south-west, located in the country of Mombercelli. VINIFICATION: Typical vinification in red, with 10 days of maceration on the skins. At the end of fermentation, the freerun wine is racked, that is transferred into clean tanks and left there to decant for a few days. AGEING : 18 months in 225 liters barriques. ALCHOL: 14,50% TOTAL ACIDITY : 5,90 g/l GASTRONOMIC COMBINATIONS: accompanies soups, important red meat dishes, salami, game, aged cheeses.
