VINIFICATION
Destalking and soft pressing of grapes. Fermentation with the marc in stainless-steel, temperature-controlled vats at 28-30 °C for 12 days.
The wine is drawn off and the first decanting occurs 15 days afterwards.
After the second decanting, the wine is stored in stainless» steel vats, where the malolactic fermentation takes place.
The wine is left to refine in small French-oalk casks.

ORGANOLEPTIC ]UDGEMENT
Ruby-red colour with violet hues. Suitably intense bouquet with woodsv hints, traces of vanilla, red-berried fruit and coffee. Warm in the mouth, full»bodied, hints of liquorice.
Good structure and long lasting with an almond tail.

ACCOMPANIMENTS
Rich and succulent first courses, important main courses of red meat roasts, boiled or braised meat, wild fowl and game. It goes well with savoury, full-fat and ripe cheese.
